How to make:
First let's prepare the bitter gourd,
First you need to take the bitter gourd and peel it. That means scrape with a little knife like the thorns around you.
Then peel off only one side of the bitter gourd. When escaping like this, he has to escape so that the bitter gourd does not completely separate into two pieces. That means all we have to do is make a hole in the bitter gourd and take out the contents and put the mixture inside to close the hole.
Now we can use a spoon to remove the seeds from the cut area of the bitter gourd.
Then put the bitter gourd in a bowl, add a teaspoon of salt, stir and leave for about 30 minutes. Then the bitterness in the bitter gourd will decrease.
After half an hour, add a cup of water and wash the bitter gourd.
Now this is going to make the filling,
First, heat a saucepan with a teaspoon of oil.
Then add onion, ginger and garlic. If desired, we can add some bitter gourd peels and seeds.
Then add turmeric, salt, coriander powder and chilli powder and bring to a simmer over low heat.
Once it cools down, add garam masala and sugar and mix well.
Now that we have made this mixture we need to take some of our bitter gourd and fill the bitter gourd with this mixture.
After filling, hold the toothpick with the help of a toothpick to cover the cut. Or let the mixture come out.
Now put another pot on the stove and heat it with 3 tablespoons of oil.
Then add the prepared bitter gourd and fry in hot oil. Do not forget to fry the bitter gourd well on both sides.
Then cover the jar with a lid and cook on low heat for about 2 minutes.
After 2 minutes, open the lid, stir the bitter gourd a little and close the lid again and keep it on the stove for about 5 minutes. In this way, fry both the sides of the bitter gourd well.
If there is any residue in the masala mixture that we made earlier, add it to the bitter gourd at this time, stir it slowly, close the lid and keep it on the stove for another 2 minutes.
